Bacon Dill Pickle Pasta

“Wow, yum!” thought Hannah Garrison, as she tried this strange dish for the first time at her friend Robin Sandomirsky’s house while visiting for the weekend in New Hampshire. Garrison had never heard of this combinations before, and was shocked when it was actually really good: bacon, pickles and pasta along with some cheese and sauce. Sandomirsky gave her the recipe for her to try and make when she returned to Rhode Island, home of the endless meals. A few days later, Garrison children Camilla and Isaac as well as father Chris, tried this recipe for dinner, and enjoyed it immensely, though they did think the bacon version was better (a vegetarian in the house!) You may think this idea gross, but don’t knock it ‘till you try it!

Ingredients:

  • About 4 cups rotini pasta

  • 8 oz bacon

  • 1/2 cup cheddar cheese, shredded

  • 2 cups dill pickles chopped

    For the dressing:

    • 1/3 mayonnaise

    • 1/3 pickle juice

    • 1/3 sour cream

    • 2 Tbsp fresh dill chopped

    • 2 Tbsp dried dill

    • 1 tsp onion powder

    • 1 tsp garlic powder

    • 1/2 tsp cracked black pepper

Directions:

Start by making the dressing, you don’t need to make it or the bacon at the same time as putting together the pasta. Make the dressing in a jar by just mixing up all those ingredients and also cook all the bacon. Once you have those ingredients ready, you can assemble the pasta. Make the pasta noodles and put them as well as the chopped up pickles in the bottom of a large bowl. Chop up the bacon and add it, the cheese and the dressing in. Mix it up, and it’s ready to eat!
