Amazing Marzipan

This is a recipe for some truly fabulous marzipan. Its pretty easy to make, and very cute looking if you make it into shapes. Here I made some almond animals, with tiny cookie cutters, some fruits painted with food coloring as well as a marzipan pig with a small apple in its mouth. To mold the marzipan into shapes, put a little powdered sugar down and use butter if it becomes too dry, and to color the marzipan, you can either paint on food coloring, or knead it in. (The third photo is of the kneaded color, and I think the texture is better that way!)

Ingredients:

  • 5 ounces (142 g) fine almond flour

  • 6 ounces (170g) powdered sugar

  • 1 teaspoon almond extract (or vanilla or rosewater)

  • 3 ounces (85g) corn syrup (plus a little for stickiness when in the mixer)

  • 1 Tablespoon butter (for kneading)

Directions

  • Put the almond flour and sugar in the bowl of a stand mixer, and mix with a spatula.

  • Add the corn syrup and almond extract and mix on low for about one minute or until it comes together when you squeeze/pinch it (and crumbly looking)

  • Put it on the counter (or a kneading suitable surface.) and knead it with butter until smooth.

  • Roll in into a log, cover with plastic and refrigerate until its moldable (or just slice it with a butter knife and enjoy!)
