Chocolate Chip Coconut Cookies

These tasty chocolate chip coconut cookies are a fun twist on the classic chocolate chip you’re used to. An ideal snack for coconut lovers, these crispy yet chewy cookies just might make your day!
Ingredients:
1 1/2 cups shredded coconut
3/4 cups almond flour
1/2 tsp salt
1 egg
1/3 cup maple syrup
2 heaping Tbsp coconut oil
1tsp vanilla extract
1/4 dark chocolate chips
Directions:
Preheat oven to 350. In a medium bowl mix shredded coconut, almond flour, baking powder and salt. In a separate bowl whisk egg, maple syrup, coconut oil and vanilla. Pour wet into dry and combine. Add chocolate and evenly distribute. Drop 2 Tbsp per cookie on a cookie sheet about 1 1/2 inches apart. Bake for 15 minutes or until golden brown. Be careful, they burn fast!
